I have been following my plan for liver health, and noticed that carrots really seem to bother me. I knew carrots were high in oxalate so I put together this food plan that follows a low histamine diet, supports the liver, and is low oxalate. Below is a list of foods I will be eating. If the item is medium in oxalates instead of low it is marked with an asterisk.
- Salad – Lettuce, *Endive, *Parsley , and Olive Oil or dressing like this one on All Recipes.
- Honeydew Melon
- Eggs, or Meat
Lunches and Suppers
- Meat (Chicken or Turkey)
- Vegetable- Cauliflour, Mustard Greens, Broccoli, Black Eyed Peas, *Green Beans, *Brussel Sprouts
- White Rice or this Roasted Rutabaga Recipe.

For oxalate content: The simplifed food list that you can download at the Trying Low Oxalates group on Yahoo groups. Trying Low Oxalates is well known for being the latest research on oxalates and their list is very thorough. If you google “Trying Low Oxalates” you will find information on how to join.
